Eric Marshall Knight
April 30, 1963 – February 10, 2026
Eric Marshall Knight stepped away from a body that no longer served him, into the loving embrace of his eternal Father, Jesus Christ,on Tuesday February 10,2026
The fourth of five children, Eric was born to the late Norbert and Audrey (Wilcox) Knight on April 30,1963 in Newport Vermont.
Eric really enjoyed cooking for as far back as he could remember. After taking the culinary arts class in high school at the St Johnsbury Academy, he knew that it was what he wanted to do. He continued with classes at Job Corps which led him to work in several places including Genesis Elder Care,The Lincoln Inn,and the St Johnsbury Academy. The last two places he worked were the Mustard Seed Soup Kitchen and Groton Lunches With Friends where he worked alongside his wife Julie and others. He felt like these locations were meant to be as he was doing what he loved,serving his community,and most of all,serving our Lord Jesus Christ.
As much as Eric enjoyed cooking, he really loved to grill. On any number of occasions he could be seen with a pair of tongs in one hand and an umbrella in the other. A pair of snow boots were possible too!
Eric also enjoyed fishing and spending time with his wife. He liked to cook, garden, play Rummy, and watch older movies, television shows, and cooking competitions with her. Especially the cooking competitions where he usually had a running commentary going about what the chefs were doing or not doing! Eric liked his “Super Heroes” as well. He was always considerate and watched the hero stuff that really annoyed his wife when she was at a doctor appointment or taking a nap!
Eric will always be remembered for the humble,kind,and compassionate man that he truly was. He was always willing to lend a helping hand to anyone. He would just simply say,what do you need,when do you need it, I’ll do my best! He put his heart into everything he ever said and did.
He leaves behind his wife,Julie Knight of Vermont and four step-children. Brandi Stanfield and Ashley Stanfield of California and Julian Garcia and Tristan Garcia of Vermont. Siblings Elma Appleby (Paul) of Vermont, Barbara Bison of Georgia, and Duane Knight and Robert Knight of Vermont. Two nieces,two nephews, one great nephew, and cousins.
There will be a Celebration of Life at Groton United Methodist Church on Saturday, June 6th at 10:30 am. All are welcome to attend.
